Success
Bread pudding made with a bread that's too soft can be very soft and almost mushy. Gently squeeze bread loaves to choose the one that has some resistance and doesn't feel like a marshmallow!

Soymilk and fat-free ingredients offer a health twist to delicious bread pudding. From eatbetteramerica.

makes:8 servings
1cup unsweetened applesauce
1cup vanilla soymilk
1/2cup fat-free egg product
1/4cup packed brown sugar
1teaspoon ground cinnamon
1teaspoon vanilla
5cups 1-inch cubes French bread
3tablespoons sliced almonds
1/4cup caramel fat-free topping, heated
1.Heat oven to 350°F. Spray 9-inch quiche dish or pie plate with cooking spray.
2.In large bowl, mix all ingredients except bread, almonds and caramel topping with wire whisk until smooth. Fold in bread. Pour into quiche dish; sprinkle with almonds.
3.Bake 30 to 35 minutes or until golden brown and set. Cut into wedges. Drizzle caramel topping over each serving.
High Altitude (3500-6500 ft): No change.

Favorite Bread Pudding
This is the easiest recipe I've ever used and I improvise and it comes out wonderful. I use whole wheat French bread and vanilla cocoanut milk instead of soy and I add dried cherries and blueberries as well and it has become one of my trademark desserts that everyone is always asking me to bake. Love this bread pudding!!!!

Fantastic
Alright so I used real skim milk and real eggs with this recipe. About 3 eggs to be precise. I also sautéed two apples in a tbsp of buttery best spread and put it in the middle of the bread chunks. Delicious with more fruit and apply goodness. I have also added raisins in that layer too. Just saying...

Yummy!
I LOVE this recipe. My husband loved it and he is a VERY picky eater. It was very delicious and not too soggy. It was very easy to make as well. I added some raising on top and a little shaved coconut the last 10 minutes of baking. It was phenomenal.

Pretty tasty!
Super easy to make, and tastes even better reheated after a night in the fridge! I'd never made/eaten bread pudding, and my oven is old (so times/temperatures given in recipes aren't always appropriate), so I was unsure of what the consistency was supposed to be when I took it out, or how to be sure it was done... Even if I did it wrong, though, it still tasted delicious!

bread pudding was great!!
I made this yesterday, and it was so quick and easy! I would definitly recommend it. The bread pudding was so yummy, and i will definetly make it again sometime!
