cups bite-size pieces assorted fresh fruit (pineapple, watermelon and cantaloupe)

cup green grapes

cup blueberries or red grapes

small star fruit, cut into 24 slices

large mangoes, peeled, seeds removed and cut into large pieces

cup pineapple preserves
  • 1 Thread 4 to 6 pieces of fruits (except mangoes) on each of twenty-four 6-inch skewers. Place skewers on large serving platter; set aside.
  • 2 In food processor, place mango pieces and pineapple preserves. Process until smooth; pour into small serving bowl. Serve kabobs with mango coulis.

Expert Tips

Mangos contain carotenoids, plant pigments that color them orange and yellow. Carotenoids are antioxidants that help protect cells from damage.

Love this, I am a firm believer of eating fruit instead of sweet dessert and this time of the year it is hard to come up with something new. I will make Fruit Kabobs for out Thanksgiving Pitch In, but will slightly change the Fruit to more Fall seasonal Fruits.Maybe a Greek Yogurt Hiney Cinnamon Dip on the side. These are a wonderful summer treat.
