Fresh-from-the-Garden Salsa

Salsa comes from the Mexican and Spanish words for "sauce"; some are fresh and others cooked. Many contain chilies, which give them that characteristic hot taste. Serve with tortilla chips, vegetables, meat, fish, chicken or eggs.

large tomatoes, seeded and chopped (3 cups)

small green bell pepper, chopped (1/2 cup)

medium green onions, sliced (1/2 cup)

cloves garlic, finely chopped

tablespoons chopped fresh cilantro

tablespoon finely chopped seeded jalapeño chilies

to 3 tablespoons lime juice

  • 1 In medium glass or plastic bowl, mix all ingredients.
  • 2 Cover and refrigerate at least 1 hour to blend flavors but no longer than 1 week.

Expert Tips

Stir in 1 can (15 oz) black beans, rinsed and drained. About 5 cups salsa.
