Variation
Blueberries make a great stand-in for the raspberries.

makes:10 muffins
1egg or 1/4 cup fat-free egg product
1 1/2cups Gold Medal® all-purpose flour
1 1/2cups Whole Grain Total® cereal, slightly crushed (1 cup)
1/3cup sugar
1/4cup fat-free (skim) milk
1/4cup canola or soybean oil
1tablespoon grated lemon peel
2teaspoons baking powder
1/2teaspoon baking soda
1/2teaspoon salt
1container (6 oz) Yoplait® Original 99% fat-free lemon burst yogurt (2/3 cup)
1/2cup fresh raspberries or Cascadian Farm® frozen organic raspberries
1.Heat oven to 400°F. Line 10 regular-size muffin cups with paper baking cups.
2.In large bowl, beat egg slightly. Stir in remaining ingredients except raspberries just until moistened; gently stir in raspberries. Divide batter evenly among muffin cups.
3.Bake 15 to 20 minutes or until golden brown. Immediately remove from pan.

Awesome
These were very good. My husband made them for breakfast this morning and subbed half the oil for applesauce. The flavor was super yummy. The did stick a bit to the paper cups so next time we will probably just spray a little pam in the bottom of the tin and forgo the paper cups.

These muffins are wonderful! They are hearty so they fill you up and have a yummy lemon flavor in every bite and the reaspberry just goes perfect in them. We added a little extra raspberry! :) I highly recommend you try them!

I like these muffins. They're a twist from the traditional blueberry muffins. I substitued applesause for the oil. Yum!
