Spicy Mexican Skillet Chicken
This is a good dish and easy to make. instead of the corn, I use a 10 oz bag of "steamer" microwave rice and a 10 oz bag of "steamer" microwave mixed veggies, and added a 1/2 cup of water. It would also make great Nachos if you cut up the chicken and added your favorite chips and cheese!

Spicy Mexican Skillet Chicken
This is a very good recipe. I have to use mild ingredients for the husband, but it was still very tasty. I used a chunky salsa, but think a regular salsa would make it more juicy. Overall a very quick and yummy dish. There were enough veggies that we didn't need a side dish although Spanish rice would have gone very well.

Mexican chicken skillet

SO GOOD.
I thought that this dish was FABULOUS. However, my mom said that she would've enjoyed it had the chicken been smaller, so next time I may cut the chicken breasts in half. However, this recipie was VERY VERY good and I will definetly be making it again.

Not Spicy
This looked sooo good but it was boring. I cut up the chicken like one of the suggestions, used our best homemade salsa and put it on salad. It was bland. Very disappointed. If I made it again I would really kick up the spices.

Very Good!!
I made this for the first time tonight, and my entire family loved it! I made it as instructed except I used a roasted salsa verde (green salsa). Next time I think I will double the salsa (just because I like the flavor of it). This is a very good recipe as is!! Definitely will make again!!

easy and delicious
very easy and tasty! we are on a low-salt diet, so I used DASH instead of salt and no salt added beans and frozen corn, but it was virtually the same.

Very Good

What a great, easy dish! I added a bit more salsa than required as it seemed a bit dry. I served it with the spanish rice recipe on this site. There was some left over corn and black beans in the skillet so I added it to the rice and ate it for lunch the next day.....yum!

More Zing
I made this for my Mexican husband and my Mexican nanny. It lacks the true spicy. Add a touch of chili powder and or a diced up jalapeno when adding the corn & beans. Also, I used fire roasted frozen corn from Trader Joe's and it made the dish tastier. I'd make it again in a heartbeat. I served it over a small scoop of brown rice to make it feel like a whole meal. The leftovers make a great burrito the next day in a whole wheat tortilla !

Minus the Chic.
I'm a poor college student who doesn't like to put much effort into cooking so I made this minus the chicken and mixed it with rice. It was great! Next time I'll try adding shredded cheddar cheese and sour cream mixed in...reduced fat of course.

hits the spot
I made this with strips of chicken instead of whole chicken breasts. I also used whole wheat wraps to create more of a burrito type meal. Great dish for people who enjoy mexican cuisine.

great healthy dinner
My son and I loved it. I omitted the salt and it still had great flavor. I added raw baby spinach and turned it into a great salad. Will make it again. Can you convert the recipe for two servings instead of 4?

Fantastic and easy!
This was very easy to make and the whole family enjoyed it. I added a 1/2 tsp fo cumin to the spices for a little more flavor without heat.
Served it with a brown spanish rice (took some help from target) to round out the meal and a few tortillas. A definite keeper.

Excellent

Good but hot!
I made this last night and everyone liked it except they felt it was very spicy. I am glad I only used 1 tsp of chili powder because I read the reviews before preparing this dish. I used some leftover salsa my son had bought at the Mexican restaurant and that may have been why it was still so hot. I will definitely make it again with mild salsa.
