makes:8 burritos
Instant brown rice
Water as called for on rice box
1/8teaspoon salt
2cups shredded cooked chicken breast
1can (15 oz) Progresso® black beans, drained, rinsed
1cup Muir Glen® organic mild salsa
2teaspoons chili powder
1/4cup chopped fresh cilantro
1tablespoon lime juice
8low-fat whole wheat tortillas (8-inch)
1cup shredded reduced-fat sharp Cheddar cheese
Salsa, if desired
1.Cook rice as directed on package for two servings, using 1/8 teaspoon salt, but omitting butter if called for.
2.Meanwhile, in medium microwavable bowl, mix chicken, black beans, 1 cup salsa and chili powder. Microwave on High 2 minutes or until hot, stirring after 1 minute.
3.Place cooked rice in large bowl; stir in cilantro and lime juice until well blended.
4.Heat tortillas as directed on package. Spoon about 1/2 cup chicken mixture down center of each tortilla. Top with about 1/4 cup rice mixture and 2 tablespoons cheese. Fold sides of tortilla toward center; fold ends over. Serve with additional salsa, if desired.

Yum! Can I have another!?
I saw this recipe 1 year ago and we continue to make this. Super easy and soooo good! Great for those quick grab something and go meals. Yummy and filling. This will continue to be one of our favorite foods! Thanks for sharing!!!!

Delicious!
I baked up some chicken with cilantro, lime, a tiny bit of salt, pepper, and a little bit of smoky (not spicy) salsa, which made a great base for this recipe to build from. The secret seems to be finding a great salsa that you love, because that can make or break these burritos. I don't like anything that is overwhelmingly spicy, but I was lucky enough to find the perfect salsa to match my tastes. I botched the rice, but the recipe still worked well because of the perfectly-seasoned chicken and flavorful salsa. I made a double batch for some friends and they gobbled up every last bite.

Awesome
We doubled the recipe (lots of good leftovers) and added a can of Mexicorn. YUM! This was fantastic.

Good to take in your lunch
I made up this recipe to have on hand to take in my lunch. My husband and I both give it a thumbs up! I mix the meat and rice together for storing and it works great. My husband also added shredded lettuce to his. It transports great and reheats like a dream. Definitely will make again. Even thinking about making and taking camping with us this summer!

Chicken and Black Bean Burritos
My family loves this recipe! We leave out the salt when cooking the rice and tend to use a bit more salsa (probably 1-1/2 cups). We also serve with fresh avacado slices. GREAT dinner!

I made these burritos last night after reading all the good reviews. They were so good! Glad I had some left over for lunch today. Great recipe! I will definitely be making these again.

Oh yeah!
This is FAB! My kids liked this recipe with all the beans,cilantro, lime juice better than their usual plain Meat and lettuce ... I did add shredded lettuce to it and mixed it up all together like the other reviewer!

Great flavor
My family truly enjoyed this recipe! I actually added the lime juice and cilantro right into the chicken mixture instead of the rice and I think it truly added great flavor. I also added sauteed onion and red peppers and lined the bottom of the burrito with fat free refriend beans the second time I made it. I may never go back to packets of taco/fajita mix!

This is a simple and delicious way to eat burritos, just right for a quick lunch or dinner, and so healthy. I did not have cilantro, used a mango salsa which I had on hand, added a little habanero sauce and some cooked corn, and enjoyed.
