Wake up to delicious warm muffins chock-full of goodness—apples, carrots, flaxseed, soymilk and high fiber cereal. From eatbetteramerica.

makes:12 muffins
1cup Fiber One® original bran cereal
2/3cup vanilla soymilk
1 1/4cups Gold Medal® all-purpose flour
1/2cup ground flaxseed or flaxseed meal
3/4cup chopped apple
1/2cup packed brown sugar
1/2cup finely shredded carrot
1/4cup flaked coconut
3teaspoons baking powder
2teaspoons ground cinnamon
1/2teaspoon salt
1/2cup fat-free egg product
1tablespoon canola or vegetable oil
1teaspoon vanilla
1.Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Spray bottoms only of baking cups with cooking spray. (Muffins will stick if baking cups are not sprayed.) Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2.In large bowl, mix cereal and soymilk; let stand about 5 minutes or until cereal is softened. Stir in remaining ingredients. Divide batter evenly among muffin cups.
3.Bake 22 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove muffins from pan to cooling rack. Serve warm.
High Altitude (3500-6500 ft): Decrease baking powder to 2 1/2 teaspoons.

If I remember correctly, Fiber One cereal has high fructose corn syrup in it. Just an FYI for those who are trying to steer clear of that ingredient.

Very nice recipe for the family. However, as a type 2 diabetic 31 grams of carbs, even deducting the fiber, bringing it to 26 grams, is too much for me. Too much added sugar. Can this be reworked with nearly the same results? This is a great website and I will be revisiting it often.

Aspartame
I was excited to try this, until I bought the Fiber One and read that it had aspartame in it. I was disappointed that a "healthy" recipe was tainted so. Bummer...

Great Quick n Healthy Breakfast/Snack
I have made this recipe several times since my family loves these muffins. My modifications are as follow: Vanilla soymilk is replaced with Vanilla sugar free creamer. All-purpose flour is replaced with Whole Wheat flour. I add: 1/2 cup each of the following: crushed pineapple shredded zuchinni chopped pecans raisins You may need to add to cooking time according to size of muffin and oven temp. I usually will bake large muffins for about 30 minutes at 350 degrees. These are so yummy we forget they are also good for you.....

flax morning glory muffins
I finally got around to making these. They definately don't have much sweetness to them but they were pretty good. I shredded the carrots on the larger side and added some raisins. all in all I will make these again.A touch of molasses would be good.

I didn't use coconut, raisins instead. I added 1/4 cup applesauce and used 1 egg white instead of the substitute. I thought this recipe was very good especially because it isn't real sweet and makes a great nutritious addition to a cup of yogurt and some fruit for breakfast on these cold, cold mornings.

Morning Glory Muffins
Made these yesterday and they are delicious. Did not put the coconut in and used sugar substitute and whole wheat flour. Will definitely be using this recipe again

I thought these were very tasty! I did grind up all of the ingredients in the food processor and it really tasted a lot like carrot cake. I do agree that it would be GREAT with nuts, so I plan to add walnuts the next time I make them. My store was out of vanilla soymilk, so I just added an extra teaspoon of vanilla to regular soymilk and it was fine. These were very moist and yummy!

DELICIOUS! IF YOU WANT YOU CAN ADD OTHER FRUITS/NUTS, EVEN MY HUSBAND LOVED THIS RECIPE AND IT HELPS YOU STAY REGULAR (IS THAT TMI?, HOPE NOT)TRY IT WILL ONE OF THE SMOOTHIES (ADD PROTEIN IF YOU WANT) AND YOU HAVE A HEALTHY, FILLING BREAKFAST ON THE GO!
