Hearty Chicken Stew with Dumplings (Cooking for 2)

Vegetables like broccoli offer a host of nutrients including vitamins A, C and folate. Be sure to get at least 3 to 5 servings of veggies daily.
Substitution
No Italian seasoning? Dried basil makes a good stand-in.
Variation

makes:3 servings

2cups frozen broccoli, carrots and cauliflower (from 1-lb bag)
1cup cut-up cooked chicken breast
3/4cup water
1tablespoon ketchup
1/2teaspoon Italian seasoning
1/8teaspoon garlic salt
1/8teaspoon pepper
1can (14.5 oz) no-salt-added stewed tomatoes, undrained
1cup Bisquick Heart Smart® mix
1/3cup fat-free (skim) milk
1/2teaspoon parsley flakes
1/8teaspoon garlic salt
1.In 2-quart saucepan, heat vegetables, chicken, water, ketchup, Italian seasoning, 1/8 teaspoon garlic salt, the pepper and tomatoes to boiling, stirring occasionally.
2.In small bowl, stir Bisquick® mix, milk, parsley flakes and 1/8 teaspoon garlic salt until soft dough forms. Drop by 6 spoonfuls onto boiling stew; reduce heat.
3.Simmer uncovered 10 minutes; cover and simmer 10 minutes longer.
High Altitude (3500-6500 ft): No change.

While the stew was tasty, the dumplings not so much. It also took much longer to cook than the 20 minutes suggested. I will try again with fresh steamed vegetables and will add additional spices to the rather bland dumplings.
