Double-Spaghetti Squash

medium spaghetti squash (about 3 lb)

oz uncooked spaghetti, broken in half
1/4
cup chopped fresh parsley

tablespoons grated Parmesan cheese
1
tablespoon margarine or butter, melted
1
tablespoon chopped fresh or 1 teaspoon dried oregano leaves

teaspoon garlic salt
  • 1 Prick squash with fork; place on microwavable paper towel in microwave oven. Microwave on High 8 minutes; turn squash over. Microwave 8 to 11 minutes longer or until tender. Let stand 10 minutes.
  • 2 Meanwhile, cook and drain spaghetti as directed on package; return spaghetti to saucepan.
  • 3 Cut squash lengthwise in half; remove seeds and fibers. Reserve one half for another use. From other half, remove spaghetti-like strands with 2 forks; reserve shell. Add squash and remaining ingredients to spaghetti in saucepan; toss. Return spaghetti mixture to squash shell to serve.

Expert Tips

Spaghetti squash and other summer squash contain a high percentage of water. More water means fewer calories for the same weight of food. Good news for your waistline.

I tried to make this today :( As the directions instructed, I cooked the squash in the microwave for 8 minutes, turned over, and tried to cook for another 8 minutes. The squash exploded in the microwave after an additional 3 minutes. I was so bummed! I usually make spaghetti squash in the oven, and I will definitely be doing that next time. The recipe sounds delicious though-- spaghetti squash is one of my favorite foods!

Hi- I am looking for the Red sause Rachel Ray made to go with the Double Spag sause. This sause had can tomatos, Grilled Eggplant, oven grilled garlic(in the garlic paper)all blended to gether. If anyone has a way for me to get this, let me know as I have tried several ways to get that recipe and failed. Also- I remember that she cut the squash in half poured olive oil on it and cooked it in oven face down-I am not good with this computer. Please help!!
