Soup is a great way to use leftover chicken. Make a double batch and freeze some in 2-cup amounts so it can be easily thawed and heated when needed.

Great chicken and veggie flavors in a Mexican soup. Stretch your chicken farther by serving it up with veggies and flavorful salsa, cilantro and chiles. From eatbetteramerica.

makes:6 servings (1 cup each)
2cups cubed cooked chicken
1can (14 oz) Progresso® reduced-sodium chicken broth
1can (11.5 oz) vegetable juice cocktail
1can (15.5 oz) Green Giant® whole kernel corn, drained
1cup Muir Glen® organic salsa (any flavor)
1can (4.5 oz) chopped green chiles
1/4cup chopped fresh cilantro
1.In 3-quart saucepan, mix all ingredients except cilantro. Heat to boiling over medium-high heat.
2.Reduce heat to low; simmer 10 minutes or until thoroughly heated, stirring occasionally. Stir in cilantro.

zesty soup
delish!! i made it for dinner tonight. i added the black beans and i used the rotel tomatoes and chillies. i made this in the crockpot. i cooked the chicken in the crockpot with the salsa and then added the rest of the ingrediants 2 hours before i ate the soup. forgot to add the cilantro so i will add it to the warm ups.

This was so delicious!! We added some cheese, tortilla chips, sour cream, hot sauce, and extra cilantro to this recipe. We will definitely be making this again!

AWSOME!! I added some black beans, celery,carrots and I marinated the chicken before I grilled it. What I think made it hearty was I used an imulsifier to 1/2 the bath and that made it a bit creamy. MMMM

Zesty Mexican Soup
Quick, easy and delicious recipe. I took advice from other reviews and sauteed the chicken for 10 minutes with olive oil, garlic and red pepper. Also added diced tomatoes and a bell pepper. Served with a southwestern salad to make a great meal. Will definitely make this again.

Absolutely delicious!!
Made this- was surprised at how easy it was! I added some diced tomatoes, and I saw someone said they added black beans which I will try next time. Adding the salsa was a great way to get extra vegetables without all the work, as well as a fantastic flavor!! Will absolutely make this one again!

This was a great soup. My family loved it and next time I will have to double the recipe. I did add a cup of black beans and it was super. This is a keeper.

This turned out to be a very tasty, not too mention easy, dinner. It was perfect for a cold night a few weeks back, and made for some delicious leftovers for my wife and I.

Easy and Hearty
I made this soup today and it was delicious and SO easy! I added extra vegetables to make the soup heartier: chopped red bell pepper, chopped celery, some beans, a dash of cumin, dried garlic and some hot sauce for a kick. I will definitely make this again!

great!
i sauteed the chicken for about 10 minutes in a tablespoon of extra virgin olive oil, with garlic, red pepper and salt. I did add extra veggies (bell pepper and tomatoes), it was delicious!

Delicious!!!
This was the easiest recipe and it is soooo delicious. I added green beans and kidney beans to the recipe. I also paired the soup with a nice loaf of hot crusty bread to soak up the yummy juice in the soup. Great recipe that I will make over and over again!!!!
