A Mexican favorite goes vegetarian. From Prevention Healthy Cooking.
Prep Time:5 min
Start to Finish:10 min
makes:1 serving
1/2to 1 cup chopped fresh vegetables, such as broccoli, snap peas, green beans and red bell pepper
1flour tortilla (8 inch)
1teaspoon raspberry chipotle sauce
1tablespoon shredded Mexican 4-cheese blend
1.Place vegetables in a microwavable bowl. Cover with plastic wrap and microwave on High 1 minute or until tender-crisp.
2.Heat medium skillet over medium heat. Toast tortilla about 1 minute on each side or until toasted. Carefully bend tortilla until edges meet but do not fold.
3.Spread chipotle sauce on tortilla. Top with vegetables and sprinkle with cheese.

This is really great and so easy to make I made some low fat turkey hamburger to go with it just because my dad and boyfriend wont eat something that doesnt have some meat, but everyone thinks its really yummy and filling. Also easy to eat for lunch leftovers!

One of my favorites
This is one of my favorites. You can have a variation every time and you can throw it together in a pinch with whatever you might have on hand! They are very simple but have so much flavor!!!
