This is a great meal. My daughter even loves it. Its a good way to sneak in green veggies. I also added a simple salad on the side (like the picture shows). It as great!

I'm eating it right now!
As I'm typing this review, I'm eating my leftover spinach manicotti at my work desk for lunch. Everyone in the office is so jealous! It makes me feel like such the homemaker to be able to pull off such a professional-looking meal.
This is an incredibly easy recipe. I reduced the recipe to make 6, so I could have leftovers for lunches (and they taste great leftover!) Would also taste great with some ground meat mixed in too.
The only things I did differently were using real chopped spinach instead of canned, I threw in some sea salt in with the ricotta mixture, and I also added more of the Italian cheese blend on top during the last 5 min of bake time. Voila! Perfecto Italiano!

Great!
It was a very enjoyable recipie, but it does make too many servings. I'm a very busy person, so what I tried with this recipie is on one of my free days, I doubled this recipie and froze it for future dinners.

This dish was great. I did not use the hot spice, because I have little ones. I used a little salt and pepper. My 4 year old asked for more, and he is a very picky eater.

I made this for dinner last night and it was delicious. I used shells instead of manicotti. It turned out perfect. The filling had a really good flavor. I used the organic sauce. I thought that it might taste funny but it was really good. I will make this again for sure.

A little bland...
I tried the recipe, followed it as it reads and it did turn out well, but I found it to be a bit bland. Maybe its just going to take adjusting my taste, but I think that adding a bit of salt to the ricotta filling would round it out a bit more.

Delicious!
This was so good, and so easy to make! Loved it. I'm definitely going to try it with fresh spinach, too. This recipe is so easy to halve, as well, which was perfect since there were only two people to eat it.

I made this for dinner and my husband and I both loved it. In the grocery store; he was hesitant to buy the light ricotta cheese instead of the regular. I'm very "by the book" with recipes normally and convinced him that the light stuff would be best, and it was! The only slight modification was putting a half teaspoon of red pepper instead of a quarter. We like a little kick. It wasn't too much, it was awesome!!

This is an excellent recipe. I used a different brand of pasta sauce (since it's what I had on-hand), but as good as it tastes I almost couldn't beleive this dish is good for you!
The only down side is that it makes a _lot_ of servings for one person. In the future, I'll simply cook this when I know I can give some away to friends and family a day or two after I make it or if I'm having a dinner party. Seven meals of real garlic, in the course of a week, gets a little overwhelming! (Or I'm just a wuss)

great manicotti!
My husband and I just loved this dish.
It had great flavor, and the crushed red pepper gives it a nice zing without over powering.
The only thing that I modified in the recipe was my use of fresh spinach. Even when I had changed that, it was still really good. I will definitely be making this again soon.
