In 10-inch skillet, heat all ingredients to boiling, breaking up tomatoes and stirring frequently; reduce heat.

this was my first experiment with black-eyed peas and it was delicious! i added tofu to it and made it a main dish instead of a side dish. i even ate the leftovers cold the next day and it still tasted really good :)
