It has spunk! This zesty vegetarian dish is flavored with salsa, chili sauce, black beans, corn and cilantro. From eatbetteramerica.

makes:4 servings
8oz uncooked fettuccine
Olive oil-flavored cooking spray
1cup chunky-style salsa
1/3cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1/4cup water
2tablespoons chili sauce
1/2teaspoon ground cumin
1can (15 oz) Progresso® black beans, drained, rinsed
1/4cup chopped fresh cilantro
1.Cook and drain fettuccine as directed on package. In medium bowl, place fettuccine. Spray fettuccine 2 or 3 times with cooking spray, tossing after each spray. Cover to keep warm.
2.In same saucepan, mix remaining ingredients except cilantro. Cook over medium heat 4 to 6 minutes, stirring occasionally, until corn is tender.
3.Divide fettuccine among 4 individual bowls. Top each with about 3/4 cup sauce mixture. Sprinkle with cilantro.

I loved this dish! It was a great twist on pasta, and the dish was full of flavor. We did change up the recipie by adding more cumin and some chili powder with water. Delicious, and can't wait to have it again
