These family-friendly pizzas can be assembled and baked faster than calling for delivery. From eatbetteramerica.

makes:4 servings
1cup cut-up cooked chicken breast
2tablespoons refrigerated reduced-fat or regular basil pesto
4whole wheat pita (pocket) breads (6 inch)
1/2cup pizza sauce
1/4cup chopped onion
1/4cup chopped yellow bell pepper
1/4cup shredded reduced-fat mozzarella cheese (1 oz)
2tablespoons shredded Parmesan cheese
1.Heat oven to 400°F. In medium bowl, mix chicken and pesto until blended.
2.Place pita bread in single layer on cookie sheet. Spread 2 tablespoons pizza sauce on each pita. Divide chicken mixture evenly among pita bread. Top with remaining ingredients.
3.Bake about 10 minutes or until cheese is melted. Cut pizzas into wedges.
High Altitude (3500-6500 ft): No change.

Fantastic!
Cooked this for my family (4 of us all together) and everyone adored these personal pizzas! Made my own pesto sauce, just combined garlic, fresh basil leaves, vinegar, olive oil, and some parmesan cheese in the food processor: delicious! Definitely making this again!

Pesto Pizza
My family and I made these in to pockets by opening up the pitas and stuffing them. This is a really easy and quick recipe. Even my kids liked them, they didn't even care there were green things in them.
