Sicilian Fusilli

Get twisted with this toss of fusilli pasta, fresh veggies, cannellini beans, artichoke hearts and Parmesan cheese. From eatbetteramerica.

makes:6 servings (1 1/2 cups each)

4cups uncooked tricolor corkscrew (fusilli) pasta (about 12 oz)
1tablespoon olive, canola or soybean oil
1tablespoon chopped fresh or 1 teaspoon dried basil leaves
1teaspoon pepper
2cups julienne (matchstick-cut) carrots (4 medium)
1medium yellow bell pepper, cut into 2-inch strips
1can (15 oz) Progresso® cannellini (white kidney) beans, drained, rinsed
1can (15 oz) tomato sauce (any flavor)
1can (14 oz) artichoke hearts, drained, cut into fourths
Grated Parmesan cheese, if desired
1.Cook and drain pasta as directed on package.
2.Meanwhile, in 10-inch skillet, heat oil over medium-high heat. Add basil, pepper, carrots and bell pepper; cook about 3 minutes, stirring occasionally, until carrots are crisp-tender.
3.Stir in pasta, beans, tomato sauce and artichoke hearts. Cook about 5 minutes, stirring occasionally, until hot. Sprinkle with cheese.

great meal
This came out really good. My husband and 7 year old both really liked it, eventhough my husband wishes it had meat. But the kidney beans add a nice texture and taste in place of no meat. I ended up using regular red kidney beans and it was good.

This recipe was deliciou! I did leave out the artichokes because none of us are overly fond of them. I would recommend a flavored pasta sauce.
