Stir-frying on the grill adds a smoky flavor to this chicken and veggie dinner that’s complemented with a citrusy marinade - ready in 55 minutes. From eatbetteramerica.
Prep Time:25 min
Start to Finish:55 min
makes:2 servings
1/4cup reduced-sodium teriyaki sauce
1/4cup frozen (thawed) orange juice concentrate
2teaspoons grated orange peel
1/2lb uncooked chicken breast tenders (not breaded)
1cup sugar snap pea pods
1cup sliced fresh mushrooms (3 oz)
1medium zucchini, cut into 1/2-inch slices (2 cups)
1/2medium red bell pepper, cut into 1-inch pieces (3/4 cup)
1.In small bowl, mix teriyaki sauce, orange juice concentrate and orange peel. Reserve 2 tablespoons mixture. Add chicken to remaining mixture; toss to coat. Cover and refrigerate 30 minutes.
2.Meanwhile, heat gas or charcoal grill. Place grill basket (grill “wok”) on grill over medium heat. Remove chicken from marinade; discard marinade. Place chicken in grill basket. Cover grill; cook 6 to 8 minutes, shaking grill basket or stirring chicken occasionally, until chicken is brown.
3.Add remaining ingredients to grill basket. Cover grill; cook 6 to 8 minutes, shaking basket or stirring occasionally, until vegetables are crisp-tender and chicken is no longer pink in center. Add 2 tablespoons reserved marinade; stir to coat vegetables and chicken. Cover grill; cook 2 to 3 minutes or until hot.

easy and delicious!
I just made this 2 days ago and will be making it again this weekend. The only difference i will do is add a little garlic and pepper flakes, it is amazing without those though!

Delish!
This recipe is easy and so yummy! We made this for friends one night and they loved it! We like to pair teriyaki rice with it and we will switch up the veggies sometimes too :)

Grilled Chicken Citrus Teriyaki
This was a hit with my husband and nephew. Both thought maybe a little less orange juice and more teriyaki. I also used all of the marinade. I kept adding it to the veggies. Next time I will add some onion and garlic. Will make again.
