Wake up dinner any night of the week—in just 15 minutes. From Prevention Healthy Cooking.

makes:4 servings
2teaspoons olive or canola oil
1lb ground buffalo or extra-lean ground beef
2teaspoons chili powder
2teaspoons chipotle seasoning
1/4teaspoon salt
8oz spring mix salad greens
1 1/2cups chopped cucumber
1/2cup Muir Glen® organic medium chipotle salsa or fire-roasted salsa
1.In large nonstick skillet over medium-high heat, warm oil. Crumble in buffalo. Season with chili powder, chipotle seasoning, and salt. Cook, stirring occasionally, about 8 minutes, or until browned.
2.Divide greens onto 4 plates. Spoon buffalo mixture and cucumber over greens. Top each serving with 2 tablespoons salsa.

Delish!
This recipe was quick, easy and delicious! The cucumbers are so good in this recipe, and I sprinkled some low-fat cheddar on top - YUM!

Review Buffalo Fiesta Salad
This has been a family summer favorite at our house for years. The fixings are so versatile, the kids can do tacos and Grandpa and I do the salad thing. We skip the cucumber, though.

simple, great flavor and so easy. nice break from the standard. Adjust the salsa and chipole for a little less spice if needed.
