Better than I thought
I just had it for dinner and it was better than I thought. I used kidney beans instead of Black eyed peas. It had a lot of flavor! I still have three leftover servings for the next few days. I would definatley make this again.

Good Rice!
I liked this one, it made a great side to my spinach enchiladas. I always change or substitute things in my dishes, this one allows many possiblities!

Another keeper!
I used pre-cooked brown rice instead of instant, and I added tofu. This was really delicious, and very filing. I printed a copy of the recipe and it went into my collection.

Very Versatile Dish
This meal was lovely and very quick to throw together. I made a lot of substitutions and this rice was still very tasty. The can of black-eyed peas that I had in the cupboard were expired (by almost a year!) so I used a can of pinto beans instead. I also added more cayenne pepper, a can of sweet corn niblets, a dash of paprika, and I used pre-cooked brown rice instead of the instant rice. I didn't have stewed tomatoes so I used a can of fire-roasted diced tomatoes. All the additions/substitutions worked well. I served this with grilled chicken and a small dollop of reduced-fat sour cream. Wonderful! My husband went back for seconds (and thirds....but don't tell!).

Pretty Good
This dish tasted good. I had to add a bit of water as it was pretty dry before I began cooking it. It could use a little more cayenne, just for more flavor, or maybe some more garlic. I also would substitute black beans for the black-eyed peas next time, as the peas stood out in a weird way. I also added chopped green onions. Overall though, this is a filling tasty dish.

great!
This dish tatsed great and was very filling. I used diced tomatoes instead of stewed and added a little more cayenne pepper (i like really spicy dishes). It turned out great. I'm going to try it with a spicy low-fat chicken sausage next time.

this was my first experiment with black-eyed peas and it was delicious! i added tofu to it and made it a main dish instead of a side dish. i even ate the leftovers cold the next day and it still tasted really good :)
