Chocolate Espresso Mousse

tablespoons light chocolate soymilk
1
tablespoon instant espresso powder or instant coffee granules or crystals
1
oz semisweet or bittersweet baking chocolate
1
cup light chocolate soymilk
1
box (4-serving size) chocolate instant pudding and pie filling mix
2
cups frozen (thawed) fat-free whipped topping
1.
In 1-quart saucepan, stir together 2 tablespoons soymilk, the espresso powder and chocolate. Cook over medium heat, stirring constantly, until chocolate is completely melted and mixture is well blended. Cool slightly.

In medium bowl, beat 1 cup soymilk and the pudding mix with electric mixer on medium speed or wire whisk 1 to 2 minutes or until mixture is well blended and thickened.
3.
Stir melted chocolate mixture into pudding mixture. Fold in whipped topping. Spoon into individual dessert dishes; serve immediately or refrigerate until serving time. Store covered in refrigerator.

Yummy

Suprisingly Great
I have to admit that I only made this recipe because I needed to use up my soymilk, I had most of the ingredients on hand and it was a fast fix to my chocoalte craving. I have tried countless low-fat or healthy desserts that pacify my craving but never tasted as good as I hoped. This receipe was the first that made me feel like I was eating a delicious dessert rather than settling in order to behave myself. My husband, who usually balks at my "healthy" desserts loved it as well. I seved it with a couple of chocolate wafer cookies and some sliced strwberries. It was so easy to make that I have already made sure taht I have all of the ingredients on hand. I am breasfeeding my 5 month old so I try to eat a healthy balanced diet and the use of the Soymilk is great. If you need another way to use up the soymilk and don't like drinking it alone, I use it to make chocolate-banana smoothies which is a great healthy snack. This will recipe will be used often!
