Eat a great-tasting fudgy cookie made with brownie mix and high-fiber cereal. From eatbetteramerica.
Prep Time:15 min
Start to Finish:50 min
makes:About 3 1/2 dozen cookies

1box (1 lb 2.3 oz) fudge brownie mix
2cups Fiber One® original bran cereal
2tablespoons miniature semisweet chocolate chips
1/8teaspoon ground cinnamon
1/3cup water
1tablespoon vegetable oil
2teaspoons vanilla
1egg
1.Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, mix all ingredients with spoon. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.
2.Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely. Store in tightly covered container. Freeze up to 2 months if desired.

These ended up in the garbage. I am an expert at disguising healthy food as sinful. However, this is not sinful, just plain gross.

Fudge Cookies
I thought this recipe was awesome, and everyone that I have shared with has enjoyed them also. The only thing I would do different next time is break up the Fiber One cereal a bit.

Protein Question
Regarding the protein in the egg. There is only one egg (6 protein grams) divided among 42 cookies. So each cookie contains only about one-tenth of a gram of protein. Not enough to count...unless you eat the whole batch!!!! And I probably could!

Yummy!
These were great for a low-cal, high-fiber cookie. I especially liked the cinnamon, it made them a little extra special. Kids even loved them!

Fiber One crunchy fudge cookies
These cookies were soooo good! Easy to make too. I think the next time i make them I will try it with reduced fat brownie mix instead. would highly recommend making these but would only eat 2 a day. There is A LOT of fiber in these-if you get my drift!!!!

Brownie Cookies
These were so good! I didn't have any fiber one cereal so I replaced it with Rice Crispies and they were still delicious! I just called them brownie cookies because that is exactly what they taste like.

easy clean up
I am a single dad who hates doing dishes, so this is the easy way. these are great cookies, but to make clean up easier use a muffin tin, and make cups for it with Reynolds Wrap Release Aluminum Foil, rip sheets about 3 - 4 inches wide, then cut those pieces in half with scissors, this will actually sharpen the scissors if you stack the pieces 2 or 3 pieces on top of each other. then take the pieces and push them into each spot of the muffin tin. this helps control the size and shape of each cookie. it does take a few extra minutes to cook this way. if you only have one muffin tin, when you take the first batch out of the tin, lift each cookie out refill with release pieces then add batter. when you are all done all you have to wash is the bowl and spoon. after the cookies are cool you can either take them out of the foil, or do as I did, and just wrap the sides of the foil pockets closed and toss them in a large ziploc, when you want some cookies just grab them and they are already wrapped, ready to go.

Yummy!
I made these today! I tried these on my 8yr old son and his neighborhoods buds and they raved about them. I would spray the pan next time as they were a little tough to remove....definitely will make again. I only ended up with 3 dozen as I ate too much of the batter before baking.....it was that good!

Yummy cookie
These cookies turned out great! Especially if you are a brownie lover like I am. I had no problem with them being too thin. Mine turned out just like the ones in the picture. Make sure you're using a family size brownie mix for 13x9 pan. The kids loved them too and I can eat them and not feel guilty!

Even with my errors these came out wonderful..Just like the picture. I used Kellogs All Bran by mistake so I added about 1/2 cup of rice crispies. Will be happy to share with WW friends.

Delish!
This is a great recipe. Our entire family likes them even though I primarily make them for those of us trying to shed a few pounds... but everyone sneaks one or two. This recipe is easy and quick and really satisfies the chocolate craving.

Fiber1 Crunch Fudge Cookie
I too found the cookie to spread out rather thinly. I guess that is how they get 70 calories per cookie. It does not look like the picture. To compensate for this I cooked them in mini muffin pans (the same yeild as cookie recipe)you have to add 4 mins cooking time approx. They were more a brownie like texture, but you feel like you are actually eating something. You could also cook them like a brownie I suppose and cut them after. My 9 yr old son liked the brownie style better than the cookie.

I make cookies on Sundays for the kids' lunches the following week. I had to make a double batch of these! BIG HIT! I like that I'm sneaking some fiber in...to be honest they won't eat the cereal itself (we're still trying to gear away from the sugary stuff), but they do love these cookies!

These cookies were absolutely delicious. The chewy consistency and rich chocolate flavor made them very fulfilling! The challenge is to only eat one or two. Will make again.

Suprisingly Delicious
I wasn't too sure about making these at first because I didn't want them to taste too much like fiber...and they didn't. These taster more like Brownie Rice Krispies.. and I couldn't stop eating them, well I had to cause I'm watching my weight (lol), and my husband loves them too! Definitely will make again.

great!
These are great. They basically taste like a brownie with Fiber One cereal in them, and surprisingly, I like it. My kids gobbled them up too. Layering 2 cookies with 1/2 cup Breyers Free Vanilla ice cream and a drizzling of regular Hershey's chocolate syrup plus 2 TBS light whipping cream is only 4 WW points, and was bigger than my usual Smart Ones desserts.

Cookies are ok
I like the taste of these cookies but mine did not set up like the ones in the picture. When I placed my mix on the cookie sheet, it spread out so thin, it was like paper. I went back to the recipe to make sure I didn't do something wrong but I followed it exactly. If you have made these before, could you tell me how well yours did? Based on the taste, I would like to make these again but not like this first time.

Baked these yesterday and they were delicious, not too sweet. They are a 1 pt. cookies if you are following WW. I used Egg beaters instead of the egg to decrease the calories even more!
