cup Gold Medal® all-purpose flour

teaspoon baking soda

teaspoon salt

cup granulated sugar
1/3
cup packed brown sugar

cup no-trans-fat vegetable oil spread

cup unsweetened applesauce

teaspoons vanilla

cups Cascadian Farm® organic oats & honey granola

oz dark or bittersweet chocolate, coarsely chopped
  • 1 Heat oven to 375°F. Line cookie sheets with cooking parchment paper.
  • 2 In small bowl, mix flour, baking soda and salt. In medium bowl, beat sugars, vegetable oil spread and applesauce with electric mixer on medium speed until smooth. Beat in egg and vanilla. On low speed, gradually beat in flour mixture.
  • 3 Stir in granola (breaking up any large pieces) and chocolate chunks. Drop by rounded tablespoonfuls onto cookie sheets.
  • 4 Bake 10 to 12 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.

Expert Tips

Dark chocolate contains some antioxidants that may help cells fight off oxygen damage. Just don't overdo it since chocolate also has plenty of calories and fat.

To boost whole grains, reduce the all-purpose flour by 1/2 cup and add 1/2 cup whole wheat flour in its place.

I was surprised at how good these tasted! I'll definitely make them again and will try half whole wheat/white flour to see if they taste just as good.

I thought these cookies were awesome! I was not expecting them to be this good for only 90 calories per cookie...but they were, and my hubby and kids loved them too! We did have chocolate chip and half butterscotch for added yumminess. :)

These cookies are delicious! They're soft, but yet, the granola gives them a great texture. They're not big on presentation, but perfect for around the house to cure that chocolate itch. Only needed 10 minutes of bake time as well. My only recommendation is to let the batter "rest" for about 20 minutes before baking. The cookies seemed to set-up better that way.
