cup Gold Medal® all-purpose flour

cup sugar
3/4
cup fat-free (skim) milk

teaspoons baking powder
1/4
teaspoon salt

tablespoon butter, melted

bags (8 oz each) Cascadian Farm® frozen organic blueberries
2
teaspoons finely chopped crystallized ginger, if desired
  • 1 Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into baking dish.
  • 2 Pour frozen blueberries over batter; sprinkle with ginger.
  • 3 Bake uncovered 1 hour to 1 hour 5 minutes or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.

Yumm! I used to make a very similar blueberry cobbler, but with 6 tablespoons of butter, instead of one- did not miss the extra fat at all- this was delicious. I used fresh blueberries, instead of frozen; replaced half of the flour with white whole wheat flour and added 1/2 teaspoon of fresh lemon peel, instead of the ginger- AWESOME!
I am getting ready to make a fresh batch now...

This dessert was a surprising success! It was so easy to make and I felt good about eating it because of the reasonable calories. I didn't have candied ginger, so I sprinkled powdered ginger and a little granulated sugar on top. It was delicious.
