bag (16-oz size) Cascadian Farm® frozen organic sweet corn (1 3/4 cups)

cans (14.5 oz each) Muir Glen® organic plain or fire roasted diced tomatoes, drained

cup canned black beans, drained, rinsed
1/4
cup chopped red onion

tablespoons chopped fresh cilantro

tablespoons fresh lime juice
1
tablespoon vegetable oil
1/2
teaspoon coarse salt (kosher or sea salt)
1/2
teaspoon ground cumin
1/4
teaspoon pepper
1
clove garlic, finely chopped
1
avocado, pitted, peeled and chopped
  • 1 Cook corn as directed on bag. Rinse with cold water; drain.
  • 2 Stir together corn and remaining ingredients except avocado. Refrigerate until ready to serve, at least 1 hour.
  • 3 Stir in avocado just before serving.

Expert Tips

Black beans are loaded with fiber--the soluble kind that helps to lower blood cholesterol. Start slowly so you have time to get used to more fiber!

My husband and I both LOVE this salad. We spent most of the meal discussing a million different ways that we could use it. Since we like black beans so much, we put in most of the can but otherwise pretty much left it 'as is.' Can't go wrong with this recipe....a really nice balance of flavors.

I have made this salad on a number of occasions and it has received rave reviews each and every time. I can't count the number of people who ask for the recipe. The combination of the chili and lime along with the Chipotle chilies is wonderful.
