Jerk seasoning and orange juice spice up this easy chicken dish that's ready in 20 minutes. From eatbetteramerica.

makes:4 (1-cup) servings
1lb boneless skinless chicken breast halves, cut into thin strips
2teaspoons Caribbean jerk seasoning
1package (1 lb) frozen bell pepper and onion stir-fry
1/3cup orange juice
2teaspoons cornstarch
1.Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken and jerk seasoning; cook and stir 5 to 7 minutes or until chicken is no longer pink.
2.Add bell pepper and onion stir-fry; cover and cook 3 to 5 minutes or until vegetables are crisp-tender, stirring occasionally.
3.Meanwhile, in small bowl, combine orange juice and cornstarch; blend until smooth. Add to mixture in skillet; cook and stir until bubbly and thickened.

I enjoyed this. Doubled the amount of seasoning though b/c it's one of my faves. Also doubled the amount of OJ to make it more saucy. Served over brown rice. I will definitely make this again.

Quite Good
We liked this quite a lot, though I made some modifications as usual. I made my own (salt-free) seasoning mix and I used fresh peppers and onions.

Great!
I thought this was very good. I would suggest that if you are making it for a family of more than 2 double it. A 1 cup serving is just not enough even with brown rice.

Simple and delish
I made this last night, super easy and quick. I couldn't find peppers and onions together in my store so I used a fresh onion and sauted them first in a non-stick sprayed with a little extra virgin olive oil and continued with the recipe. I was worried about the spiceyness (my daughter is picky about spice) but we all loved it. Thank you for a healthy quick meal.

Not authentic but good
This recipe was pretty good. I would definitely make it again for a quick weeknight supper. After returning from Jamaica recently, however, it is hardly authentic flavor. Still good though!
