Pair fresh spinach with chicken breasts for a quick-fix weeknight supper. From eatbetteramerica.

makes:6 servings

6boneless skinless chicken breasts (about 1 3/4 lb)
1cup fat-free (skim) milk
1/2cup Progresso® chicken broth (from 32-oz carton)
1medium onion, chopped (1/2 cup)
1bag (10 oz) washed fresh spinach, chopped
1/4teaspoon salt
1/4teaspoon pepper
1/4teaspoon ground nutmeg
1.Spray 12-inch skillet with cooking spray; heat over medium heat. Cook chicken in skillet 2 minutes on each side; reduce heat to medium-low. Stir in milk, broth and onion. Cook about 5 minutes, turning chicken occasionally, until onion is tender.
2.Stir in spinach. Cook 3 to 4 minutes, stirring occasionally, until spinach is completely wilted and juice of chicken is clear when center of thickest part is cut (170°F). Remove chicken from skillet; keep warm.
3.Increase heat to medium. Cook spinach mixture about 3 minutes or until liquid has almost evaporated. Stir in salt, pepper and nutmeg. Serve chicken on spinach.

Not bad!
But I added some of my own touches. First I took out the chicken before adding the spinach. (There was just way to much spinach before it cooks down). After the spinach was wilted and done, I removed it from the pan and turned the heat to high and added 1 tbs. of Flour to make a creamy sauce. It turned out fantastic and my kids scarfed it all up! I will make this one again for sure! * I also used Fat-Free Chicken Broth, Kosher Salt and Fresh Ground Black Pepper.

Pretty good
The spinach in this dish is sooo good, but the chicken was a little dry and flavorless.

LOVED IT!
This was very easy to make and tastes great! My kids loved it as well as my hubby! Very flavorfull! Definately give this one a try!

healthy dinner entree; Chicken lacks flavor & needs to be cooked longer than stated on recipe. Overall, it was okay.

Pretty good and filling. I love spinach so this was a recipe I knew I would like. I agree that the cooking time was longer than on the recipe. If it said med-low, I cooked on med, and if it said med, I went to med-high. It took quite a while to evaporate the liquid. Good way to get veggies in, but I'm not sure it would be too kid friendly.

Not bad at all. I made this with baby spinach and just cut it up. But you MUST like spinach a lot to enjoy this.

Meal was fabulous! Only thing to watch is the timing!! The chicken needed way longer than stated, as well as the spinach. My father is still raving about the spinach. Overall easy recipe to make.
