makes:4 servings

4large bell peppers
1/2lb lean (at least 80%) ground beef
1/2cup chopped onion (1 medium)
1large clove garlic, finely chopped
1can (15 oz) Muir Glen® Organic tomato sauce
1/2teaspoon ground cumin
1/4teaspoon salt
1/4teaspoon ground cinnamon
1/8teaspoon ground red pepper (cayenne)
2/3cup uncooked couscous
1/2cup water
Pine nuts, if desired
Fresh cilantro, if desired
1.Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers.
2.In 10-inch skillet, brown beef, onion and garlic over medium-high heat about 5 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in tomato sauce, cumin, salt, cinnamon and red pepper. Stir in couscous. Divide beef mixture evenly among peppers.
3.Pour water into 4 1/2- to 6-quart slow cooker; stand peppers upright in cooker.
4.Cover; cook on Low heat setting 5 to 7 hours or until peppers are tender. Garnish with pine nuts and cilantro.

The filling was amazing. I only cooked them for about 3 and a half hours and they came out to be at the perfect tenderness...not too mushy at all.

I cooked these peppers for the minimum amount of time and the peppers came out too tender - almost mushy. They were falling apart as I took them out of the slow cooker. Perhaps this is not the best method for making stuffed peppers. The filling is great though!

This is cleary not a vegetarian recipe if the second ingredient listed is ground beef.

I rated this item as 3 by accident, I would have rated it a 1 or even a 0. My family did not like this recipe one bit, noone finished it. It was very bland and had an overall bad taste. We usually love stuffed peppers, just not this recipe! Unfortunately, we will not be adding this to our menu again.
