Simple burger buns become a light and luscious chocolate dessert. From Prevention Healthy Cooking.
Prep Time:15 min
Start to Finish:1 hr
makes:10 servings
8oz seedless hamburger buns, cut into cubes
1/2cup dried sour cherries
1/4cup cherry liqueur or cherry-flavored juice
2/3cup packed light brown sugar
1/3cup unsweetened baking cocoa
3 1/2cups 1% milk
4egg whites, lightly beaten
3/4cup prune puree
2teaspoons vanilla
1oz semisweet baking chocolate, finely chopped
1tablespoon confectioner's sugar
1.Heat oven to 350°F. Coat medium baking dish with cooking spray. Place bread cubes evenly in prepared baking dish.
2.In small microwaveable bowl, combine cherries and liqueur or juice. Microwave on High 1 minute. Let stand 5 minutes, or until cherries are plump and most of liquid is absorbed.
3.In large bowl, combine brown sugar, cocoa, milk, egg whites, prune puree, and vanilla. Add chocolate and cherries with any remaining liquid. Stir to mix. Pour over bread cubes. Press down lightly to make sure all bread is moistened. Let stand 15 minutes for bread to absorb liquid.
4.Bake 35 to 40 minutes, or until slightly puffed and set. Remove from oven and allow to cool slightly. Sift the confectioners’ sugar over pudding.
