cups Progresso® beef flavored broth (from 32-oz carton)
1 1/2
cups uncooked orzo or rosamarina pasta (9 oz)
1
can (11 oz) Green Giant® SteamCrisp® Niblets® vacuum-packed whole kernel corn, undrained
1
can (4.5 oz) chopped green chiles, undrained

teaspoons olive, canola or soybean oil
1/2
lb cut-up extra-lean beef for stir-fry
1
large bell pepper, cut into 1/4-inch strips

cup chopped fresh cilantro
  • 1 In 2-quart saucepan, mix broth, pasta, corn and chiles. Heat to boiling; reduce heat. Cover; simmer about 10 minutes or until pasta is just tender. Remove from heat. Let stand about 5 minutes or until almost all liquid is absorbed.
  • 2 Meanwhile, spray 10-inch skillet with cooking spray. Add oil; heat over medium-high heat. Add beef and bell pepper; cook about 5 minutes, stirring occasionally, until beef is brown.
  • 3 Stir beef mixture into pasta mixture. Stir in cilantro.

First we used lean thinly sliced beef, and then we used small red, orange and yellow peppers-enough to be the equivalent of one pepper. This is a quick meal-which is a plus. If it weren't for the fresh cilantro, it wouldn't have had much flavor, and it did not look very appetizing. The kids were not sold. It was not a horrible meal and we will use it when we need a very quick economical meal.
