cup cubed cooked chicken breast

large peach, chopped (3/4 cup)

medium stalk celery, diced (1/2 cup)

teaspoon chopped fresh or 1/2 teaspoon dried mint leaves
  • 1 In medium bowl, mix yogurt and mayonnaise until smooth. Stir in remaining ingredients.
  • 2 Cover and refrigerate at least 30 minutes until chilled.

This was a light and easy summer meal. It is also very versatile. I used Nectarine instead of peach, zucchini instead of celery and FF vanilla yogurt instead of plain. I made these changes because this is what I had on hand and did not want to go to the store. It turned out delicious, even my 3-year-old loved it!
