Bulgur with Mushrooms and Blue Cheese

tablespoon olive or canola oil

cup uncooked bulgur

cup sliced fresh mushrooms (3 oz)

cup chopped green onions

cups Progresso® reduced-sodium chicken broth (from 32-oz carton)

cup chopped Granny Smith apple

tablespoons chopped walnuts

tablespoon crumbled blue cheese
  • 1 In 3-quart saucepan, heat oil over medium heat. Add bulgur, mushrooms and onions; cook, stirring frequently, until bulgur is golden and mushrooms are tender.
  • 2 Stir in broth. Heat to boiling, stirring once or twice; reduce heat. Cover; simmer 15 minutes (do not lift cover or stir). Remove from heat.
  • 3 Stir in remaining ingredients. Fluff lightly with fork.

Expert Tips

Eating at least 3 servings of whole grain daily may help reduce blood cholesterol. Look for the word "whole" to be sure you get the whole grain.

Bulgur is made of wheat kernels that have been steamed, dried and crushed. Cooked, it has a tender, chewy texture.

This was excellent! I am not a big fan of blue cheese and I tried it anyway. It doesn't even need the cheese. I will make this again maybe try it with Feta Cheese.
