flax morning glory muffins
I finally got around to making these. They definately don't have much sweetness to them but they were pretty good. I shredded the carrots on the larger side and added some raisins. all in all I will make these again.A touch of molasses would be good.

I didn't use coconut, raisins instead. I added 1/4 cup applesauce and used 1 egg white instead of the substitute. I thought this recipe was very good especially because it isn't real sweet and makes a great nutritious addition to a cup of yogurt and some fruit for breakfast on these cold, cold mornings.

Great Quick n Healthy Breakfast/Snack
I have made this recipe several times since my family loves these muffins. My modifications are as follow:
Vanilla soymilk is replaced with Vanilla sugar free creamer.
All-purpose flour is replaced with Whole Wheat flour.
I add:
1/2 cup each of the following:
crushed pineapple
shredded zuchinni
chopped pecans
raisins
You may need to add to cooking time according to size of muffin and oven temp. I usually will bake large muffins for about 30 minutes at 350 degrees.
These are so yummy we forget they are also good for you.....

Morning Glory Muffins
Made these yesterday and they are delicious. Did not put the coconut in and used sugar substitute and whole wheat flour. Will definitely be using this recipe again

I thought these were very tasty! I did grind up all of the ingredients in the food processor and it really tasted a lot like carrot cake. I do agree that it would be GREAT with nuts, so I plan to add walnuts the next time I make them. My store was out of vanilla soymilk, so I just added an extra teaspoon of vanilla to regular soymilk and it was fine. These were very moist and yummy!
