English Muffin Breakfast Pizzas

English Muffin Breakfast Pizzas
Recipe Tip
Note from the Nutritionist:
The kids will love having their own tasty pizzas for breakfast or even for dinner. Kids are born with an ability to know when they are full, so it's important to listen to them and not make them eat everything on their plate.

Looking for a hearty breakfast idea? Then check out this muffin base pizza with a cheesy egg topping - ready in 20 minutes. From eatbetteramerica.
Prep Time:20 min
Start to Finish:20 min
makes:4 servings
1cup fat-free egg product or 4 eggs
1/4cup fat-free (skim) milk
Dash of salt
Dash of pepper
2teaspoons canola or soybean oil
2tablespoons chopped onion
2tablespoons chopped red bell pepper
2tablespoons chopped cooked ham
1/2cup shredded reduced-fat Cheddar cheese (2 oz)
2whole wheat English muffins, split, toasted
1.In small bowl, beat egg product, milk, salt and pepper with wire whisk or fork until well blended.
2.In 10-inch nonstick skillet, heat oil over medium heat. Cook onion, bell pepper and ham in oil 3 to 5 minutes, stirring occasionally, until vegetables are crisp-tender. Pour egg mixture into skillet. As eggs begin to set at bottom and side, gently lift cooked portions with spatula so that uncooked egg can flow to bottom. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist; stir cheese into eggs.
3.Spoon egg mixture evenly over muffin halves.

This was wonderful! I used a few small pieces of turkey bacon instead of ham, and added a little hot sauce. I also added some fresh chopped tomato on top. Will definitely make this again!

it was excellent. It was too much for the morning yet not too little. Absolutely loved it-it actually inspired a kiss and a hug from my hubby.
