can (15 oz) Progresso® black beans, drained, rinsed
1/3
cup chunky-style salsa
1/4
teaspoon ground cumin or chili powder

bagels, cut horizontally in half

plum (Roma) tomatoes, sliced
Lettuce leaves
  • 1 In food processor or blender, process beans, salsa and cumin until smooth.
  • 2 Spread 1/4 cup bean mixture over each of 4 bagel halves. Top with tomato, lettuce and remaining bagel halves.

Black beans are loaded with fiber--the soluble kind that helps to lower blood cholesterol. Start slowly so you have time to get used to more fiber!

But bagels are very high in calories. why not opt for whole grain bread, open faced,eaten with a knife and fork to avoid runny sandwich. All other ingr sound great though.

This made a super fast dinner after work. I added a little cheddar cheese to the top and used mini bagels. Yum!

I tried this last night. I used multi-grain bagels, and opted for the chili pepper instead of cumin. It came out tasty! I even had 2 male friends over, and they also enjoyed it. Easy and WILL make again - but will prob top it off with some cheese.
