Fiber One® Crunchy Fudge Cookies

Best Life Diet approved recipe! Eat a great-tasting fudgy cookie made with brownie mix and high-fiber cereal. From eatbetteramerica.
Prep Time:15 min
Start to Finish:50 min
makes:About 3 1/2 dozen cookies

1box (1 lb 2.3 oz) fudge brownie mix
2cups Fiber One® original bran cereal
2tablespoons miniature semisweet chocolate chips
1/8teaspoon ground cinnamon
1/3cup water
1tablespoon vegetable oil
2teaspoons vanilla
1egg
1.Heat oven to 350°F. Spray cookie sheets with cooking spray.
2.In large bowl, mix all ingredients with spoon. Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
3.Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely. Store in tightly covered container. Freeze up to 2 months if desired.

Suprisingly Delicious
I wasn't too sure about making these at first because I didn't want them to taste too much like fiber...and they didn't. These taster more like Brownie Rice Krispies.. and I couldn't stop eating them, well I had to cause I'm watching my weight (lol), and my husband loves them too! Definitely will make again.

These are great. They basically taste like a brownie with Fiber One cereal in them, and surprisingly, I like it. My kids gobbled them up too. Layering 2 cookies with 1/2 cup Breyers Free Vanilla ice cream and a drizzling of regular Hershey's chocolate syrup plus 2 TBS light whipping cream is only 4 WW points, and was bigger than my usual Smart Ones desserts.

Cookies are ok
I like the taste of these cookies but mine did not set up like the ones in the picture. When I placed my mix on the cookie sheet, it spread out so thin, it was like paper. I went back to the recipe to make sure I didn't do something wrong but I followed it exactly. If you have made these before, could you tell me how well yours did? Based on the taste, I would like to make these again but not like this first time.

I just made these cookies and they are delicious. For only 1 point (WW)a cookie. The whole house smells like your making brownies and they taste just as good as a brownie.

Crunchy Fudge Cookies
Baked these yesterday and they were delicious, not too sweet. They are a 1 pt. cookies if you are following WW. I used Egg beaters instead of the egg to decrease the calories even more!

This is a very good recipe is you don't like really sweet cookies. My 25 yr old son kept coming back for more!
