pounds beef boneless round steak

teaspoon coarsely ground pepper

cups coleslaw mix or shredded cabbage

medium onion, coarsely chopped (1/2 cup)

cup uncooked regular long-grain rice

cup barbecue sauce
1/2
cup water

  • 1 Spray 3- to 3 1/2-quart slow cooker with cooking spray. Cut beef into 3-inch pieces. Sprinkle beef with salt and pepper.
  • 2 Mix coleslaw mix, onion, rice, barbecue sauce and water in large bowl. Layer beef and coleslaw mixture in slow cooker.
  • 3 Cover and cook on Low heat setting 8 to 10 hours. To serve, fill buns with beef mixture. Serve with sliced red onions and additional barbecue sauce, if desired.

Expert Tips

For a more mild sauce, use tomato sauce instead of barbecue sauce. Bone-in round steak can be used instead of the boneless steak. Cut it into 3-inch pieces, leaving the bone attached to one of the pieces. Be sure to remove it before serving.

Potato salad and carrot and celery sticks are easy accompaniments to these sandwiches. Top off the meal with ice-cream bars.
