cups mashed ripe bananas (3 to 4 medium)

cup Yoplait® Fat Free plain yogurt (from 2-lb container)

teaspoon vanilla

cups Gold Medal® all-purpose flour

teaspoon baking soda
1
teaspoon salt

teaspoon ground cinnamon

cups Whole Grain Total® cereal, slightly crushed
  • 1 Move oven rack to low position so that tops of pans will be in center of oven; heat oven to 350°F. Grease bottoms only of two 8x4-inch loaf pans or one 9x5-inch loaf pan with shortening.
  • 2 In large bowl, mix sugar and margarine. Stir in eggs whites until well blended. Add bananas, yogurt and vanilla; beat until smooth. Stir in remaining ingredients except cereal just until moistened. Stir in cereal. Pour into pans.
  • 3 Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 5 minutes. Loosen sides of loaves from pans; remove from pans. Cool completely, about 1 hour.

I made this bread just about 1 hour ago using half the amount of ingredients.
I followed the recipe for most part except that I substituted 1/2 part dark brown sugar, added 2 medium bananas to reduce the added sugar, used one egg and 2 tbsp more yogurt and chopped walnuts.

I have a convection microwave/oven. I started cooking at 350 as mentioned but my bread was done in about 35 minutes. This could be due 1/2 the original quantity and the use of bigger baking pan.

Bottom line---just loved the softness of it minus the fact that it has just 1tbsp of butter:)

I changed the recipe, deleting all the sugar and added 1 1/2 Cups Splenda & used 2 Large eggs and only 2 large very ripe bananas. I used Raisin Bran for the cereal & measured 1 1/2 Cups then crushed it to 1Cup & added broken pecans. Added 1 1/2 teaspoon cinnamon because we like it!. I baked it in a glass rectangle loaf pan for an hour @ 325. I also sprinkled confectioners sugar on top. It's beautiful! AND tastes good. The house smells good too!

Even the ingredeint list says this is not healthy! Just taking out the egg yoke doesn't make it good for you. Maybe whole wheat flower, and cut way back on the sugar. I would use dark brown sugar, half to 3/4 cup, test by consistancy, since sugar adds to the liquid content. This really needs to go back to the test kitchen!
