Baked Salmon with Mango Salsa

large salmon fillet (about 2 lb)

cup lemon juice

ripe medium mangoes, cut in half lengthwise, seed removed and diced (2 cups)

teaspoons chopped jalapeño chile
1/2
cup chopped fresh cilantro
  • 1 Heat oven to 400°F. Spray 13x9-inch pan with cooking spray.
  • 2 Cut salmon fillet into 8 serving pieces. Place salmon in pan. Drizzle 1/4 cup of the lemon juice over salmon.
  • 3 Bake 15 to 20 minutes or until salmon flakes easily with a fork.
  • 4 Meanwhile, in medium glass or plastic bowl, mix mangoes, chile, cilantro and remaining 1/4 cup lemon juice. Serve over salmon.

Mangoes contain carotenoids, plant pigments that add orange and yellow color. Carotenoids are antioxidants that help protect cells from damage.

I whole-heartedly disagree with people who say the mango salsa is too spicy- I switched to a hotter pepper (serrano) and added more of it because I thought it was weak. That is purely a personal preference issue. Start with a little jalapeno, stir it up and sample a little. If it's not hot enough add more, not hot enough next time use a stronger pepper. I suggest you chop it extremely small for a better mixing of flavors. I frequently serve this with asparagus/salad & wild rice.

Love this mango salsa! It's great on the salmon and super on fish tacos and salads. Great twist on a south-of-the-border flavor!

This was an easy recipe to prepare. I would make the mango salsa ahead of time to allow the flavors to meld together better. I also seasoned the fish with a little seafood seasoning to bring out the flavor.
