tablespoons no-trans-fat 68% vegetable oil spread stick

cup Fiber One™ Complete pancake mix (from 28.3-oz box)
1/2
cup fat-free (skim) milk
1/4
cup fat-free egg product or 1 egg
1/2
teaspoon vanilla

small apple, very thinly sliced
1 1/2
teaspoons cinnamon-sugar
Maple-flavored syrup, if desired
  • 1 Heat oven to 400°F. While oven is heating, melt vegetable oil spread in 9-inch glass pie plate in oven.
  • 2 Meanwhile, in small bowl, beat pancake mix, milk, egg product and vanilla until well mixed. Pour over melted vegetable oil spread in pie plate. Arrange apple slices on batter. Sprinkle with cinnamon-sugar.
  • 3 Bake 15 to 20 minutes or until edges are deep golden brown. Serve warm with maple syrup.
