Angel Hair with Roasted Red Pepper Sauce

oz uncooked angel hair pasta

jars (7 oz each) roasted red peppers, drained

tablespoon olive oil

tablespoons chopped fresh basil
1
teaspoon sugar
1/2
teaspoon salt
1/2
teaspoon freshly ground black pepper
1/4
cup grated Parmesan cheese (1 oz)
  • 1 Cook and drain pasta as directed on package.
  • 2 Meanwhile, in food processor or blender, combine roasted peppers, oil, basil, sugar, salt and black pepper. Process until smooth.
  • 3 Place pasta in serving bowl. Add roasted pepper sauce; toss to coat. Top with cheese.

the sauce was very tasty! i used whole wheat angel hair making it even more nutritious! i also sprinkled some red pepper flakes on top with the parmesan cheese which gave it a little kick. the only thing i would change, is less pasta. 12 oz uncooked makes WAY too much for only 4 servings and it spread the sauce a little thin. will definately make this again! oh & the photo pictured with the recipe is NOT what it looks like, there is no broccoli or other veggies etc in this recipe
