can (14.5 oz) Green Giant® reduced-sodium cut asparagus spears, drained

large tomato, seeded, chopped (1 cup)

medium onion, chopped (1/2 cup)

tablespoons finely chopped fresh cilantro

tablespoons fat-free mayonnaise or salad dressing
1
tablespoon lime juice

to 6 drops red pepper sauce
1/8
teaspoon pepper

clove garlic, finely chopped
Baked tortilla chips, if desired
  • 1 In blender or food processor, blend asparagus on medium speed until smooth.
  • 2 In medium glass or plastic bowl, mix asparagus and remaining ingredients except tortilla chips. Cover; refrigerate at least 1 hour to blend flavors. Serve with tortilla chips.

As someone who has just recently begun to tolerate asparagus, I was skeptical of this recipe. But, it was so good! When I tried it right after making it, I could taste the asparagus, but it was still enjoyable. After the flavors developed overnight you could barely taste it. With the other ingredients and the creaminess of the blended asparagus it really seemed like I was eating true guac! I shared it with many skeptical co-workers, all of whom liked it as well!

This was an easy and great recipe! I love guacamole and this hit the spot. I made it for an office pot luck and everyone like it. I also made extra for home and my son ate it up with in 2 days. Definitely a keeper!
