    I recently discovered the health benefits of Salba (chia seed).  When I went to the health food store to get it, I was told that several medical professionals purchase it regularly.  My nurse friend is one of them.  It can be added to anything -- is tasteless.  I wonder if anyone has an oatmeal cookie recipe with Salba as an ingredient (also with whole wheat flour).

    Chia seed is an edible seed that comes from the Salvia hispanica plant.  It's part of the mint family and grows well in the warm climate of southern Mexico.  Preliminary research suggests that the seed may contain omega-3 fatty acids like flax seed, and may provide fiber in addition to certain minerals.


    We don't have any recipes on EatBetterAmerica using chia seed.  It would be up to you if you want to experiment with them in baking--possibly substituting them for flax seed in recipes.  Good luck!
