    N1- I have been reading some of the recipes here and they are still not healthy enough: there is still a huge amount of fat chocolate cookies with over 100 Cal/cookie?? it's too much! and of which STILL 35 Cal are from FAT? Way tooo much!


    Look at mediterranean cooking (which is very different from US-Italian concept: NO cheese on top, lot's of seafood, lot's of veggies (boiled/steamed instead of fried and stirred). Use fresh herbs to replae some of the salt, NO sugar/syrup/honey nor vream/butter on main means sauces/gravy.

    Use unsweetened applesauce instead of oil, use 1/4 cup of egg substitute for 1 egg, add vanilla extract to make it more flavorful, and also add almond extract - it highlights the chocolate flavor.  You cut fat and calories, and, with the applesauce, it will be moist.  Hope that helps..
