Yup, I'm coming up on theee b-day of all b-days! I retired four years ago and since then my knees have allowed me to become the best couch potato, although I didn't start out that way. At the beginning I was pretty active around my house and yard. Little by little I found myself spending more time inside doing not much of anything. It's time to stop. Although I do have medical prolems with my knees (my right knee needs to be replaced) the more I 'sit' the worse it's going to get. I ate much better when I was working, not so much now.
So, that's my story -- I need backup. And, recipi's that are great tasting but also are inexpensive and can be pared down for a single person....or that can be frozen easily.
