Smile for Strawberry Shortcake

I’d like to share a great dessert recipe that would be ideal for a graduation, potluck or picnic. We recently tested this recipe in our kitchens and had great reviews from our tasters. Comments like “this is amazing” and “I cannot believe that this is lower fat” were abundant the day that we had our taste panel. Everyone commented that they liked the flavor and texture of the cake, and all preferred this healthified version over the original. Cake topped with juicy, sweet strawberries—yum! It’s the perfect dessert for this time of year and makes everyone smile!

Healthified Strawberry Shortcake Squares has 60% less fat and 30% fewer calories per serving than the original and I love that the strawberries contribute a really nice amount of vitamin C to the recipe. We developed it with canola oil, but give an alternate of unsweetened applesauce, a nice option if you want to cut the fat even further. I think it's really pretty, don't you?

                                                

I like to mix the strawberry mixture a little ahead of time so that some juice forms. The recipe says to refrigerate up to an hour but I’ve actually made it 2 hours ahead of time and it was fine. If you plan to make this for July 4th, add some fresh blueberries to the strawberries before refrigerating.

This easy strawberry shortcake will be on my party menu several times this spring and summer. Hope you’ll try it too!
