Pondering Panini

Looking for a great lunch or light dinner to serve guests?  Ever tried a panini sandwich?  You've probably seen one listed on a menu somewhere and perhaps tried one with mixed results.  Sometimes they're too greasy on the outside.  Sometimes they're too cheesy and one bite forces all the yummy insides out! 

But what makes a panini--well, a panini?  I was surprised when I looked it up. Panini is an Italian word--actually the plural for panino--which translated from Italian literally means "small bread roll."  In the US, we use the word panini in a singular sense.  A panini sandwich is a sandwich made from a small loaf of bread filled with veggies, meats and cheese, that is sometimes served hot.  In Italy, panini are often grilled with a sandwich press--and served without any sauce or topping.
