Do you ever cook for two people? I certainly do, so am always interested in new ideas that help with this sometimes difficult task of cooking in smaller amounts. When I am cooking this way, easy ideas, few ingredients and great flavor are at the top of my list. Recently I was looking for a recipe to serve and came across Black Bean-Pasta Cancun. This recipe fits my criteria perfectly and was one that I had not tried before so thought it would be fun to experiment with something new.

For this particular meal, I was having a friend over for dinner and wanted to serve a light but satisfying meal that was quick and easy. Also, my guest had recently been on vacation in Cancun so this dish had the right title (and flavors) for my meal. The great reviews that consumers had given the recipe also sparked my interest and I was sure that I had a winner. After checking my pantry for ingredients, I stopped to pick up the remaining few things that I needed. I even saved a little money with the coupon on the website for tomatoes.
Although I appreciate that this recipe is meatless, I decided that for this meal, I would add some rotisserie chicken that I had in the refrigerator. The dish went together as planned and was delicious. We both enjoyed the light cumin flavor and it was just the right amount for the two of us. I served this easy skillet meal with warm rolled flour tortillas, a tossed green salad and the wine that my friend brought. What a lovely relaxed evening we had—great food and good conversation. We agreed that this recipe was a keeper that we would make again.
