This year, I am invited to a friend’s house for Easter dinner. The hostess is serving turkey breast and mashed potatoes. All of the guests will contribute something to the meal and my part is some sort of side dish or salad. I know that this group is always watching what they eat so I want to be mindful of ingredients, fat and calories. Also, I want to have something that will taste great.
I did some browsing on the website today and found two great recipes that I think will be perfect. As I couldn’t make up my mind between a side or salad, I decided to do both – and they are both pretty easy to make anyway.
Corn always seems to be popular at holiday meals, so I chose a favorite of mine, Creamed Corn. It’s really pretty, creamy and rich, but fairly low in calories and fat. Also, I know our tasters really liked it during kitchen testing. I can make it ahead of time, cool it down, then reheat it quickly in the microwave just before we eat.
The other recipe I am making is Sherried Greens with Fruit and Blue Cheese. This is a really elegant, and refreshing salad that I have served before and received good comments. The recipe gives you a choice of vinegar but I really like it made with balsamic and happen to have that on hand. The dressing can be made ahead and the salad ingredients can all be cut up ahead except the pear – I’ll slice that when I arrange the salad. Here's a picture of each recipe.
