Ready to eat in 20 minutes, full of healthy ingredients and high in fabulous flavor describe the recipe that I think I’ll make tonight for dinner. I’ve invited a friend to dine with me and Tomato-Basil Chicken is on the menu. My friend and I both enjoy basil so I know that we will both like this dish. Also, I’m impressed that the recipe is fairly low in calories, has only 6 grams of fat and contains 6 grams of fiber per serving. Even if I add a little sprinkle of shredded Parmesan cheese (which I plan to do) it’s still a healthy choice.

I can quickly shop on my way home for ingredients that I am missing. For convenience, I know that I can purchase cooked chicken at the deli, in the frozen foods section or sometimes it’s available near the other meats or lunchmeats. Also, with the coupon for Muir Glen® tomatoes that’s on the website, I’ll save some money.
A recent interesting discovery of mine is that basil with the roots attached is sometimes available at the grocery store. This means that the basil is really fresh and will stay fresh for longer than if you purchase just the leaves. I found these live plants in the produce section near the fresh greens but have also seen them parked next to the fresh tomatoes, so keep your eyes open. All that is necessary for storage of these live plants is to keep the roots damp. Refrigeration is not recommended so an added bonus is the wonderful aroma from this pretty plant as it sits on my kitchen counter!
To complete my easy meal, I’ll serve cantaloupe wedges and warm French bread slices. I'm looking forward to an evening of great food, a glass of wine and lots of good conversation.
