Next weekend, my schedule includes a gathering of very old friends. Several of them are from out of town, so those of us living in the area are planning to make appetizers and other foods to share. As this party is actually planned for two evenings, the hope is that the food we serve will work for either night or both nights. A challenge to be sure, but I think I have an idea for one great recipe to make and take. It’s pretty, really flavorful, low in both calories and fat, and always brings rave reviews. Also, if we consume all of it on the first night, it’s easy to make another batch for the second night – a definite plus in this case.
Bruschetta is not only the name of a traditional garlic and olive oil flavored warm bread, but also the name of a very easy and delicious recipe that’s become a favorite with many of our staff. Because of the large number of friends attending the party, I am doubling the recipe – easy to do in this case. Also, I really like the flavor of fire-roasted tomatoes so will use those instead of the regular.

For serving, it’s easy to have the tomato topping in a shallow bowl for guests to spoon onto toasted bread slices. Before I toast the bread in the oven, I always drizzle with olive oil and sprinkle with just a bit of garlic powder – a little tip that adds lots of flavor.
